Read moreAfter several months of renovations and a $750,000 investment, Le Coureur des Bois restaurant in Belœil is entering a new chapter in its gastronomic journey. At the helm, Executive Chef Jean-Sébastien Giguère—also behind Restaurant h3, La Cabane du Coureur, and Climats at Time Out Market Montréal—makes no secret of his ambitions: to turn Le Coureur des Bois into a Michelin-star-worthy establishment.
A Completely Redesigned Setting
To achieve this goal, the restaurant’s environment needed a full makeover. “The space had aged poorly. It no longer reflected the experience I wanted to offer. Today, with the current economic reality, when someone chooses to dine out, everything has to be on point: the food, the wine program, the service, the ambiance, and the look. I was missing the aesthetic—and a bit of the ambiance,” the chef explains.
The renovation project was entrusted to designer Arianne Dalpé, who transformed the space into one that is both cozy and sophisticated, luxurious yet welcoming. Emphasis was placed on natural materials such as wood, marble, and leather—a deliberate choice to preserve the restaurant’s original spirit while elevating its visual identity toward a more refined and contemporary universe.
An End-to-End Guest Experience Redesign
Beyond aesthetics, the transformation is also highly functional. Furniture, sound system, acoustics, and even the staircase leading to the renowned wine cellar—known for its exceptional collection of grand crus—have all been rethought. The guest experience was central to every decision, with the ongoing aim of creating an atmosphere that matches the quality of the cuisine.
On the culinary side, Chef Giguère is also taking a new direction. The now more flexible menu features shareable dishes at accessible prices. “You can come in, sit at the bar, enjoy a pasta dish with a good glass of Chablis, and walk away for $40. That’s the spirit of Le Coureur des Bois: high-quality dining, but accessible,” he says.
A Must-Visit on Montreal’s South Shore
Located within Hôtel Rive-Gauche, Le Coureur des Bois is positioning itself as a must-visit destination for gourmet dining on the South Shore. With this reopening, Jean-Sébastien Giguère hopes to make a lasting impression and elevate Le Coureur des Bois among Quebec’s finest restaurants—and perhaps soon, into the ranks of Michelin-starred establishments.
